Preparation:
After a first selection in the vineyard, the grapes undergo a second separation, on a manual selection table and then proceed to separate the grain from the skins. The grains enter the pneumatic press, where they will be pressed at low pressure.
The must is cold-settled in stainless steel tanks for 24 hours.
One part ferments in stainless steel tanks and the other in 500-liter French oak barrels, separated by batches until the moment of blending.
Battonage during this period and aging for 5 months on its own lees.
