Preparation:
After a first selection in the vineyard, the grapes undergo a second manual selection on the selection table. The grains enter the pneumatic press where they are pressed at low pressure. The must is then cold-drained in stainless steel tanks for 24 hours.
Alcoholic fermentation takes place in 500 l French oak barrels, at a temperature between 14º and 16º. Battonage during this period and aging for 6 months on its lees.
