Preparation:
After a first selection in the vineyard, the grapes undergo a second separation, on a manual selection table and then proceed to separate the grain from the skins. The grains will enter stainless steel tanks, where they will undergo alcoholic fermentation at a controlled temperature (20-22ºC). The extraction is done using . We perform a maceration for three weeks, followed by aging in stainless steel tanks and barrels (10% of the total) of 500l of French wood. The final blend is made at the end of the aging.
