Harvest: from September 13 to 15. Manual harvest in 10 Kg boxes.

After a first selection in the vineyard, the grapes undergo a second separation, on a manual selection table and then proceed to separate the grain from the skins. The grains enter the pneumatic press where they will be pressed at low pressure. The must obtained is deposited by gravity in stainless steel tanks. In these tanks, fermentation will take place at a temperature between 16º and 18º.
